BOX CLUB – BERN – OCTOBER 2021

Dear Cheese Lover,

Welcome to our October Box!  The artisanal cheeses we selected from canton Bern are made with fresh mountain milk from the nearby pastures and brushed by hand.  Each cheese offers a different flavor profile that is unique to the recipes perfected by the cheese dairy.

You will find in this Box Club, specialties that are infused with garden herbs or made with added cream to enhance its richness.  Some cheeses you can taste nature – earthy mushroom or fresh hay.   We encourage you to experience each artisanal cheese and savor the flavor on your palate!

Chrüter Joggeli

Characteristics :  A semi-hard cheese aged 5 months and infused with garden herbs

Type of milk :  Cow, thermized

Tasting notes :  Chrüter Joggeli is a full-flavored semi-hard cheese with a soft, tender texture.
Made with fresh whole milk infused with garden herbs and fresh celery, which gives its unique taste that is both oniony and herby.  Perfect to enjoy at lunchtime or at an apéro!

Serving suggestion :  Delicious on a sandwich!  Also, perfect to present this herby specialty on a cheese board.

Chlöisu Chäs

Chlöisu Chäs

Characteristics :  A semi-hard cheese aged 3- 4 months made with Sumiswald cream

Type of milk :  Cow, thermized

Tasting notes :   Chlöisu Chäs is made with the addition of Sumiswald cream, which gives a tender and soft texture and a very creamy taste.  It has round complex flavors that give hints of umami – like a savory, mushroom risotto. Close your eyes and savor the moment!

Serving suggestion :  Enjoy this cheese on its own to discover the hidden umami flavors.

Schönrieder Bergkäse Rezent

Characteristics :  A hard cheese aged 12 – 18 months

Type of milk :  Cow, thermized

Tasting notes  :  Schönrieder Bergkäse Rezent is a hard, mountain cheese that has a round taste of butter and a hint of nuts.  The fresh milk comes straight from the mountain pastures of Saanenland where the cows graze in the lush meadows and untouched landscape.

Serving suggestion :  Pair with a buttery, oaky Chardonnay to enhance the buttery and nuttiness of this specialty.  Red wine may mask its delicate dairy flavors.

Charme de Möser

Charme de Möser

Characteristics :  A soft, bloomy white rind cheese with a delicate taste of hay, aged minimum 14 days

Type of milk :  Cow, thermized

Tasting notes :  Charme de Möser is a soft cheese with a bloomy rind made with fresh cow’s milk from the neighboring pastures. You can taste the hay in this cheese which reminds you of where the precious milk comes from – grass-fed cows. It has a creamy taste and texture which is balanced by a light tanginess.

Serving suggestion :  Perfect for a cheese board as it maintains a firm texture and does not melt and lose its shape.  Place on top of an olive oil crostini and drizzle with a spicy, fruit jam!

Visiting the cheese dairies

On our visits to the cheese dairies, we never know what to expect.  This time they were brushing the cheese by hand without any robotics and rocking it with Bon Jovi!
