We love to end the year on a high note!  Our December 2021 Box features the “Best Of” cheeses and wine we discovered on our travels across Switzerland from the prior year (2020). This month we are taking you to St-Gallen, Appenzell Ausserrhoden, Ticino, and Zug!

Delight your senses in a taste explosion of Swiss artisanal cheeses and wine that will be sure to please you or the special Foodie in your life!

Canton: Appenzell Ausserrhoden

Urnäscher Holzfasskäse

Characteristics :  A semi-hard cheese aged 4-5 months, enhanced with Appenzeller beer!

Type of milk :  Cow’s milk, thermized

Tasting Notes :  Appenzeller beer adds deep flavors and incredible complexity to the cheese.  The beer is added directly to the milk during the cheese production, but the exact recipe and technique are a guarded secret!   Shhhh!

Serving suggestion :  Perfect for an apéro served with a light beer and smokey charcuterie

Canton :  Ticino

Formagella

Characteristics :  A soft cheese aged 1 month, made in the traditional Ticino style

Type of milk :  Cow’s milk, thermized

Tasting Notes :  Formagella is soft and smooth, with a taste of fresh milk. It has a clean taste with the balanced acidity of a tangy Greek yogurt.

Serving suggestion :  Formagella goes very well with fried mushrooms and potatoes.

Jersey Blue

Characteristics :  A semi-hard, blue-veined cheese, aged 4-8 weeks

Type of milk :  Raw cows’ milk from the Jersey Blue cow breed

Tasting Notes :  A king of blue cheeses – very noble and balanced with wonderfully nutty aromas and smokey notes. The milk from the Jersey Cow is known for its high fat content. There is no need for added cream to this cheese!  Its creamy dough is enhanced with its piquant, full-bodied taste!  The color of this cheese is slightly yellow due to the high beta-carotene content in the Jersey Cow milk.

Serving suggestion :  A delight with a glass of sparkling wine or Champagne

Försterkäse Bio

Characteristics :  A soft cheese

Type of milk :  Cow, thermized

Tasting Notes :  Försterkäse Bio has a wooden rind wrapped around its crust which adds a smoky, woody flavor that is almost bacon-like.

Serving suggestion :  This smoky cheese goes well with a wine that is not too tannic, such as a Pinot Noir.

Characteristics :  A semi-hard cheese, aged 6 months

Type of milk :  Cow, thermized

Tasting Notes :  This cheese is unique because its rind is encrusted with wood chips from a pine tree, which gives it its distinctive woody aroma and taste.  Its texture is soft, smooth, and creamy, which balances the light pine flavor.

Serving suggestion :  The beautiful aroma and taste is perfect for the holiday season! This woody cheese is best served with a slightly sweet wine to lift up its earthiness.

Terre Alte Bianco Di Merlot 2020

Grapes :  Merlot

Origin :  Ticino DOC Bianco di Merlot

Vintage :  2020

Wine Style :  Dry white wine, with a pale straw yellow color. Fruity finesse mingling of lime, green apple, white peach, William’s pear, and white flowers notes. It has a fresh acidity and a good length with a mineral finish.

Serving suggestion :  Fresh and fruity, but also creamy with a mineral finish. Ideal for an aperitif!  We paired this wine with the Walchwiler Tanne-Chäs with its pine-scented aroma and the Försterkäse Bio which is wrapped in wood and imparts a smokey flavor. A perfect pairing for a festive winter holiday apéro!
