The Laiterie du Mouret is located in a small village of the same name. René Kolly and his team collect the milk from the producers twice a day, it is produced within a radius of only 5km. The proximity allows the milk to keep all its flora and thus give an incomparable taste to its cheeses. They transform the milk into several house specialties, but also into Gruyère AOP and Vacherin AOP, as the canton of Fribourg requires!

René Kolly is very attentive to his ecological footprint and seizes every opportunity to reduce it. He works in collaboration with the local biogas company to transform and reuse the materials produced in his establishment. An intelligent cycle that puts everyone in agreement.
