November 2021 Edition:  Cheeses perfect for melting

Welcome! Bienvenue! Willkommen! To the debut Gourmet Box by Drink Moi and L’Atelier du Fromage. It’s great to host you on this new epicurean journey.

Our first Box is on fire: it’s the Melting Cheese Box! The perfect antidote as summer bids farewell and the leaves begin their autumn dance.

Altesse du Coin by Domaine le Mermiere (GE)

Altesse – or Highness – is one of my favorite lesser-known alpine grape varieties. Hailing from the Haute Savoie region of France, it has found favor with a small but passionate group of vignerons in Vaud and Geneva.

Crafted by winemaker Christoph Batardon, Altesse du Coin contains no added sulphites, and comes from bio-certified grapes grown less than 100 meters from the French border. Sitting at a confluence of terroirs: the Alps to the south, Mont Salève to the west, and the Jura to the north, it is an expressive wine of great depth and complexity that opens the senses and conversation. It spends 12 months on the lees in French Oak barrels before release.

Domaine le Mermiere

Grape: 100% Altesse (aka Roussette).

Wine Style:  dry, aromatic, and expressive.

Characteristics:  punchy, rich aromas of ripe quince, peaches, and nutty earthy notes. Lush and round with a long finish.

Serving recommendation: 12-13 degrees Celsius. Open the bottle approx. 15 minutes before serving.

Interesting fact: Altesse is in fact an ancestor to another wine that pairs with melted cheese, Chasselas.

Serving Recommendations

Pair it with the Raclette and its assortment of condiments. Or enjoy alongside a classic Croque Monsieur with a lick of mustard and béchamel sauce.

As an alternative: roasted Poulet Bresse with herbs, in a creamy white wine sauce, or cauliflower baked with cheese with roasted garlic and breadcrumbs.

Cheeses Perfect for Roasting

For our November Gourmet Box by Drink Moi, we selected three types of melting cheeses to pair with the Altesse. The Nidwaldner Bratkäse by Molki Stans is simply divine broiled over crusty bread or crispy, buttery rösti.  A specialty originating in the cantons of Nidwalden and Obwalden, Bratkäse is an older cousin to raclette and one of the oldest cheeses of Switzerland.

Of course, we must feature raclette in our Cheeses Perfect for Melting edition!  To further your enjoyment, we have selected the Seiler Raclette Geräuchert, which is a smoked cheese and winner at the Swiss Cheese Award 2016/2017.   The Seiler Raclette Weisswein – also a Swiss Cheese Award winner, as its name suggests, is infused with white wine and reminds us of a lovely fondue.

Our surprise component to this Gourmet Box by Drink Moi is the Hausgewürz spice from Käserei Bürg (cheesemaker Pirmin Döring).  Pirmin’s wife, Daniela, has developed her own secret raclette spice blend that has become a local favorite!  She now sells this spice in their cheese shop!
