OUR APRIL BOX IS FULL OF AWARD-WINNING ARTISANAL CHEESES FROM APPENZELL AUSSERRHODEN!

Welcome!

Our April Box featuring the artisanal cheese of Appenzell Ausserrhoden is full of prize-winners from the World Cheese Awards 2021 held in Oviedo, Spain. We cannot wait for you to taste these amazing discoveries!  Together with the Hohe Lust Weiss from Ochsentorkel Weinbau, we have a special offering of artisanal cheese and wine Boxes this month!

You may notice this time we are only highlighting one cheese dairy.  First, Urnäscher Käse has so many delicious and unique house specialties, it is difficult to decide which ones NOT to include in our Box!  The second reason is while we visited other fromageries with excellent quality cheeses, we like to seek out smaller facilities and this time they were not able to meet our needs for volume – thanks to our amazing customers!  We are grateful to all the new people trying our selections and the loyal followers who have subscribed from the beginning! We strive every month to offer you a unique discovery experience of Swiss artisanal cheeses!

Urnäscher Hornkuhkäse

Characteristics :  A cream semi-hard cheese aged for 6 to 8 months

Type of Milk :  Mountain milk from the horned Appenzell cows, thermized

Tasting Notes :  This cheese is extra special because it is made with the beloved horned Appenzell cows which are rooted in time-honored Appenzell customs.  The “Öberefahre” or journey to the alps is an important tradition that lives still today.  This cheese has a bold spicy personality that is also nutty and tastes of dried hay and straw. It won the silver medal in the World Cheese Awards 2021!

Serving Suggestion :  We can eat this cheese any time of the day!  An essential on a cheese board with spicy salami.  The cheesemaker loves this cheese in a traditional Swiss German-style cheese salad.

Urnäscher Weinmutschli

Characteristics :   A semi-hard cheese made with red wine and aged for 5 to 7 weeks

Type of Milk :  Mountain milk, pasteurized cow’s milk

Tasting Notes :  Rich flavors of red wine come through with this creamy cheese.  It has a light woody taste and the aroma reminds us of the inside of a wine barrel.  The cheese is soaked for a few days in a fine red wine which imparts its complex taste.  Some of the wine crystals settle on the edible rind which is a nice textural component when enjoying this cheese.

Serving Suggestion :  A beautiful apéro cheese with a wine-colored crust looks stunning on a cheese board.  Perfect to enjoy with a variety of red or white wines!

Urnäscher Edelweiss Paprika-Pfeffermantel

Characteristics :  A soft, cream cheese coated with spices and aged 10 days

Type of Milk :  Mountain milk, pasteurized cow’s milk

Tasting Notes :  This soft mountain milk cheese with a bloomy white rind is enrobed with cracked black pepper and paprika.  The special crust adds a kick of spice and texture to the creamy, soft dough.  We love how the spice does not overwhelm the cheese and you can still taste the mountain milk.

Serving Suggestion :  Spread on top of a crusty baguette and pour yourself a glass of your favorite full-bodied red wine. Heaven!

Urnäscher  Ginkäse

Characteristics :  A semi-hard cheese infused with local small-batch gin and aged for 3 to 4 months

Type of Milk :  Mountain milk, thermized cow’s milk

Tasting Notes :  Infused with local gin from Appenzeller Edelbrand AG, a small start-up in Urnäsche, this semi-hard cheese is made with fresh milk from the Urnäsche mountains.  It has a tangy juniper aroma and is full of bright herbal flavors including thyme and also a sweet bouquet of floral flavors. You can taste the gin that lightly and beautifully compliments the creamy taste and texture of this unique cheese.  It is no surprise this cheese won the World Cheese Award 2021 bronze medal in Spain!

Serving Suggestion :  A perfect cheese for a cocktail party or apéro.  A conversation starter and a highlight to any cheese board! Rest 30 minutes before serving to allow all the complex flavors to shine!

Urnäscher Berggouda Rezent

Characteristics :  A semi-hard cheese aged for 6 to 12 months

Type of Milk :  Mountain milk, thermized cow’s milk

Tasting Notes :  A true locally produced Dutch specialty!  For the love of Gouda and Holland, the cheesemaker combined a Dutch traditional cheese with Swiss cheesemaking craft. The cheese is made with Dutch Gouda cultures and blended with local Urnäsche mountain milk. Rather than covering with a layer of wax, this cheese is stored and cared for just as the other cheeses in their cave, which brings a unique Swissness to this incredible specialty.  We love the ultra-creamy texture balanced with a bright tanginess that dances and mingles with the notes of nuts and hay.  A great cross-cultured personality!  Another bronze medal award winner at the World Cheese Awards 2021 in Spain!

Serving Suggestion :  This cheese would pair well with an English India Pale Ale with that has earthy, hay-like flavors and woody hops.

Tasting Notes :  Citrus aromas, white flowers a woody note, fresh acidity, and medium-long length.
