We are ready for 2022 to be an amazing and memorable year!  We hope you are ready too!  We want the artisanal cheeses we selected for January to reflect the great year that lies ahead.  Therefore, we challenged ourselves and visited 3 cheese dairies in canton Fribourg and selected 7 different house specialties of Swiss artisanal cheeses to delight your tastebuds.  Buckle your seatbelts – you are in for an amazing ride!  Explore the Fribourg terroir with us !

Péché Mignon Saffron

Péché Mignon Saffron

Characteristics :  A soft, bloomy white rind cheese, aged 9 days, infused with locally grown saffron

Type of milk :  Cow’s milk, pasteurized

Tasting Notes :  Péché Mignon Saffron really blew our minds at the first sight and taste! It has the perfect velvety texture to lose yourself. It is balanced and floral and perfectly perfumed with saffron. If you love saffron, this specialty is made for you!

Serving suggestion :  Its vibrant yellow color is gorgeous on a cheeseboard!  Choose a wine that will not overpower the delicate saffron flavors.

San Antonio

Laiterie du Mouret

Canton :  Fribourg

San Antonio

Characteristics :  A semi-hard cheese aged 12 mois

Type of milk :  Goat milk, thermized

Tasting Notes :  San Antonio has a buttery, milky taste and it is pleasantly salty.  This is not a stinky goat cheese but rather a perfect introduction to goat cheese for those who are shy about trying something new.

Serving suggestion :  A perfect artisanal cheese for apéro, especially when cut into cubes and served with a dry but fruity white wine.  A red wine will overpower the delicate notes of the goat’s milk.

Characteristics :  A soft, bloomy white rind cheese, aged 9 days

Type of milk :  Cows’ milk pasteurized

Tasting Notes :  Péché Mignon Nature is a creamy, pleasantly pungent soft artisanal cheese that blooms in your mouth or as it warms to room temperature.

Serving suggestion :  Pair with a dry sparkling wine to bring out the earthiness and sweetness of both the cheese and the wine.

Le Petit Glânois

Le Petit Glânois

Characteristics :  A semi-hard cheese aged 2-3 months and matured with white wine

Type of milk :  Cow, raw milk

Tasting Notes : A truly famous local favorite, Le Petit Glânois is unctuous and smooth with a complex taste that comes from the maturing process that involves white wine. The exact technique is a guarded secret! We tasted notes of hay and it finishes with a touch of nuts. This cheese also has that delicious stink of a good fondue!

Serving suggestion :  A glass of white wine would complement this artisanal specialty, but it would be equally delicious melted inside a hot panini sandwich! Pass the paprika chips, please!

Characteristics :  A soft, bloomy white rind cheese, aged 9 days, infused with locally grown chives

Type of milk :  Cow, pasteurized

Tasting Notes :  A perfect marriage of chives and fresh cream. You must close your eyes to savour this artisanal specialty and imagine yourself tiptoeing in the garden of fresh herbs. The secret to maintaining the fresh chive taste is timing – knowing when to add the chives to the cheesemaking process. Of course, this secret is in the vault!

Serving suggestion :  A beautiful addition to a cheeseboard and served with crusty bread or crunchy crackers.

Characteristics :  A soft, bloomy white rind cheese, aged 9 days, infused with locally grown chives

Type of milk :  Cow, pasteurized

Tasting notes :  Délicatesse envelopes you like a delicate dream! It is the perfect balance of tangy and creamy with a texture like velvet in your mouth.  It has a round flavor with notes of fresh hay.  After your first bite, you crave for more!

Serving suggestion :  This artisanal specialty may melt on your cheeseboard at room temperature, so give it space to breathe. Beautiful with a sparkling rosé!

Characteristics :  A semi-hard cheese infused with truffles, aged 4 months

Type of milk :  Cow, raw

Tasting Notes :  A sophisticated specialty with a complex, umami taste that is mild and earthy from the addition of truffles.  There is a slight tanginess that elevates the flavors and brings balance and brightness to this delightful cheese.

Serving suggestion :  Pair this exquisite cheese with a Brut Champagne with buttery, brioche notes that will complement the earthy truffles of this artisanal cheese.

Triptyque Blanc “Barrique” 2020

Grapes :  Blend of Johanniter, Seval Blanc and Charmont

Swiss Wine Region :  AOC Vully

Vintage :  2020

Wine Style :  Medium aromatic intensity, aromas of tropical fruits: mango, pineapple, and yellow apples; notes of honey and vanilla. Medium-high acidity and medium-long persistence.

Serving suggestion :  We paired this assemblage wine with the Péché Mignon Nature and San Antonio.  The fruity notes of this wine are a perfect accompaniment to the creamy and slightly spicy profile of the Péché Mignon Nature. San Antonio with its buttery and salty notes further enhances the fruity aromas of the wine. A wonderful way to celebrate the new year!
