About the wine region of Neuchâtel
The wine-growing region of the canton of Neuchâtel is the most important in the Three Lakes region. Covering 606 hectares, the vineyards flourish on the gentle slopes that stretch along the western side of Lake Neuchâtel.
This region mainly produces Chasselas and Pinot Noir, which are becoming the specialties of the region. Its unfiltered “Oeil-de-Perdrix” and unfiltered wines have positioned this region as one of the most innovative in the country. Moreover, with more than 20% of its vineyards cultivated using organic methods, Neuchâtel is considered the most organic of all Swiss wine-growing regions.
2019 Oeil-de-Perdrix Légende of Domaine Bouvet-Jabloir :
This month, we present an emblematic and charming wine from Domaine Bouvet-Jabloir. Located in the commune of Auvernier since 1923, this wine estate is known for its long tradition of family values and its remarkable evolution and modernization over four generations. Under the command and administration of brothers Alexandre and Dimitri Colomb, the Domaine Bouvet-Jabloir winery has received several successive distinctions and is considered one of the most emblematic wineries in Neuchâtel.
The “Oeil-de-Perdrix Légende 2019” has an elegant, bright salmon color. Made from 100% Pinot Noir, it convinces with its intense aroma of raspberry and currant, as well as notes of grapefruit and a hint of rose. On the palate, we detect a medium to high acidity, the taste of red berries and grapefruit, as well as a slightly sweet peach note. The “Oeil-de-Perdrix Légende 2019” is long lasting, balanced and fresh. It is recommended as an aperitif, with seafood and salads.

It is rare to find combinations of rosé wines with cheese, but remember that both products have acidity and texture characteristics that manage to highlight the attributes of each. Tomme au lait de Bufflonne is a soft cheese with an authentic milk taste and a creamy touch that blends perfectly with the acidity of our Pinot Noir and its red fruit flavors; while for Forest cheese, the flavor of the pine is enhanced by the acidity of the wine, the buttery texture of the cheese is enhanced by the light tannins present in our rosé wine. Each pairing is a unique experience that deserves to be discovered and tasted.
