We want November to become a month for toasting and that’s why we bring you a delicious pretext with our Apéro-box of Valais. Enjoy with us a little piece of the incomparable region!

It is well known that Valais is an emblematic wine region of Switzerland with a long history and a great reputation. Drawn mainly by beautiful terraces that stretch along the northern bank of the Rhone and enveloped by a very particular climate that favors the maturation of the grapes, Valais is a region that offers a wide variety of endemic grapes such as Petit Arvine, Cornalin, Humagne Rouge and Heida, and a vast range of wine styles such as dessert or wines called Vin des Glaciers. You will always find something new to try!

The winery and the wine :

This month I bring you a wine made from Heida or Païen grapes (also Savagnin Blanc) from the Colline de Daval winery, a five-generation family business that has opted for product diversity and careful control of its production chain. It is located in the commune of Sierre, under a castle structure that is now also used as a hotel. Colline de Daval offers a complete and unique wine experience!

Coteaux de Sierre Païen is a lime-colored wine with a golden rim, in the nose we find citrus, tropical fruits, and some dry fruits aromas. In the mouth, we have a medium acidity, with flavors of pineapple, orange, peaches, quince, and hazelnuts. Medium-bodied and long-lasting.

Why did we choose this wine?

We have spoken in past blogs that the acidity of the wine plays a very important role in pairing with cheese and what we try to do with our selections is to preserve the textures and flavors of both products without overpowering each other.

The citric and fruity flavors of our Païen enhance the herbal notes of the Alpenrosenkäse, a sensation that is also enjoyed for a long time after tasting them. The average acidity of the wine goes perfectly with our Hobelkäse which is a slightly fattier and more mature cheese, thus helping to drag that excess fat and leaving a very elegant texture in the mouth.
