Welcome!

We have a delightful selection of artisanal cheeses that we discovered on our road trip through canton Nidwalden.  Our Box Club for November features an assortment of specialties that range from bold, nutty, and complex to tender, mild and creamy.  We can hardly wait to share them with you!

Artisanal Cheeses from Canton Nidwalden

Naturzauber

Naturzauber

Characteristics :  A hard cheese aged 7 to 8 months

Type of milk :  Cow’s milk, thermized

Tasting Notes :  Naturzauber is bold, complex, and attractive with an intensity that can tickle your tongue. Its aged hard character is softened by round flavors of nuts and a hint of smokiness. We also detected flavors that reminded us of dried sweet onion.  A truly complex cheese with a long finish.

Serving suggestion :  We love to tame this intense specialty with a medium-body, Cabernet Jura Blanc de Noir by Tellen.  The fruity notes of this wine bring out the hidden sweetness of this bold cheese.

Charme

Characteristics :  A white, washed rind, semi-hard cheese aged 4 to 5 months

Type of milk :  Cow’s milk, thermized

Tasting Notes :  Charme is a local favorite that brings a smile to your face.  It has a tender, creamy texture and offers notes of grass and hay mingling with dairy flavors

Serving suggestion :  We love this cheese paired with a medium-body, Cabernet Jura Blanc de Noir by Tellen.  The intense notes of exotic fruits and melon on the nose marry beautifully with this tender cheese.

Characteristics :  A semi-hard cheese aged 4 to 5 months

Type of milk :  Cow’s milk, thermized

Tasting Notes :  Waldhöcker has a complex taste that keeps you guessing the flavors.  At first we tasted herbs, honey, and a slight earthiness.  These flavors make sense given the name “wald” which translates to forest.  Then followed by notes of dried flowers and herbal tea.  There is also a vegetal flavor… could that be broccoli?  Waldhöcker is a delicious surprise to your taste buds!  What do you taste?

Serving suggestion :  A beautiful, complex-tasting cheese that would spark conversation at an apéro.  Allow this specialty to warm to room temperature to fully enjoy all its flavors.

Weisser Stanser Kuhmilch

Weisser Stanser Kuhmilch

Characteristics :  A bloomy white rind, soft cheese

Type of milk :  Raw cow’s milk

Tasting Notes :  Weisser Stanser Kuhmilch is a very rich and creamy soft cheese that has a beautiful texture that is slightly flowing when ripe.  It has a pure, milky taste that is slightly sweet and slightly tangy like a fine Greek yogurt.  It finishes on the palate with a soft mushroom taste that comes from the rind.

Serving suggestion :  Devour this gorgeous cheese with a fruit-forward, lightly oaked Chardonnay that can slice through the rich texture of this ultra-creamy cheese.

Visiting the cheese dairies of Nidwalden

Our favorite part of our job is visiting the cheese dairies and meeting the cheesemakers and their employees.  This time we were surprised!  We grilled raclette outside the cheese dairy and savored it inside the cheese caves!  An amazing experience that we will never forget!
